Production technology: the olive harvesting system is carried out through manual stripping that preserves the integrity of the fruit. The pressing takes place within 12 hours after the harvest with a continuous cycle extraction system at low temperature. The oil obtained is immediately filtered.
Maturation: in stainless steel tanks.
Aging: 8 months in bottle.
